Amy Sherman-Palladino did leave, though I'm not sure exactly when - I think the debacle that was s6 was still on her watch.
personally, I think the show should have ended with the Luke/Lorelai kiss in the season 4 finale, and they should have spared us the godawful Rory slept with a married man! storyline.
