PEANUT BUTTER!!!

also: almonds [any nuts/legumes, really], dark green leafys (broccoli, spinach) -- okay, you don't cook, but I'm a fan of frozen veggies where you just add boiling water.

Are you vegetarian/vegan? The intuitive response to "protein" is "animal products," but since I'm vegetarian I tend to *not* recommend animal products to people.

Oh, and chickpeas [listed in at least one of the above links] are what hummus is made of, so you can get hummus from the grocery and use it as a sandwich spread. My sandwich of choice is hummus, mushrooms, spinach, and grated carrots, but you can combine just about any veggies with hummus. Oh, and falafel is yummy, too (made from fava beans or chickpeas). A friend of mine's mom made falafel balls for me one time, but I wonder if you couldn't buy them premade at a grocery.
